Plaited Poppy Seed Loaf

I think I have finally found a yeast bread recipe that I like!
I have been trying to perfect baking yeast bread for years, but with little success. The bread was edible, but it was a little flat and heavy. We spent a lot of time making bread with buttermilk and baking powder in school, but the humble little yeast was very neglected - we only devoted one class to it, and even then, I don't even think we made bread, we made pizza dough and fruit rolls.
Anyway, here's the recipe I used:

1 tablespoon active dried yeast
3 tablespoons sugar (the original recipe called for only 1, but I wanted crusty bread)
250ml warm milk
55g melted butter/ margarine
420g strong flour
1 teaspoon salt
1 beaten egg

Beaten egg and poppy seeds for glazing

1 Mix the honey, warm milk, melted butter in a bowl. Stir until the yeast dissolves - this may take 20 minutes
2. Mix the flour and salt. Make a hole in the centre and add the wet ingredients along with the beaten egg.
3. Place the dough onto a floured surface and knead until smooth and elastic. Place in a warm place until the dough has doubled in size.
4. Knock back the dough. Cut the dough into 3 pieces. Roll the pieces into long sausage shapes.
5. Braid the dough and place onto a floured baking tray. Leave in a warm place to allow the dough to rise again.



6. Brush on the beaten egg and sprinkle on poppy seeds.




7. Bake the bread in a pre-heated oven at 180ºC for about 30 minutes. (The bread will sound hollow when you knock on the bottom of the loaf).
8. When cooked, place on a rack to cool.
